De-sporterizing an 8mm Mauser rifle?

I inherited an 8mm Mauser rifle a few years ago.

When my uncle bought it, it had been “sporterized”, and he used it for years as his deer rifle.

Is it possible to either

  1. De-sporterize it (ie fully restore to German military condition), or
  2. Otherwise rework the piece so it is closer to the standard German military issue?

With the caveat that “anything is possible with enough time and money” that really depends on to what extent it has been sporterized and what condition it was in before it was sporterized. For a full restoration:

To simply bring it back close to the original standard issue, you can get most of the parts if you don’t care about serial numbers. I’m not an expert on their collectibility, so I am not sure if it would be worth the effort if the rifle been ground on and the serial numbers don’t match. It might even be less expensive to find one in the original configuration depending on its condition and just enjoy your uncle’s rifle as it is.
